Explanation for irregular sugar patterns?

So i have been a Type 1 Diabetic for about 6-7 months now and this weird sugar pattern has been happening a lot lately. This afternoon at around 6:20 i had a low blood sugar (58) and decided to fix it with some glucose tablets (about 4 carbs per tablet and i ate 4) well it didn’t rise at all and kept lowering so i figured it was because i over-compensated for my dinner, so i ate a 15 gram snack along with the tablets and waited. Well after about an hour it went up to about 68 and i figured i was okay to go on a walk (i waited a bit before having another snack for the walk) after the walk i had a sugar level of about 70 and that was alright considering i had just burnt fuel. But right now it is 12:19 and i have eaten nothing since the low and have been drinking water, i am currently 279 and have climbed for a steady hour. Can anyone explain why my pattern would do such a random thing? (I have only had this happen about 3 times in the past few months but it is a major annoyance to have, thank you for reading)

TLDR: After dinner i had a low of about 60 and fixed it by eating about 25 grams of carbs, i went on a walk and after the walk it was 70 (8:00) well at 12:19 i have eaten nothing since dinner and i am 279, any reason for this to be such a weird pattern? Thank you.
