Blood sugar rising after low/no carb meals

Type 2 Diabetic here. Why might my blood sugar spike after having a low/no carb meal? The last couple of mornings I've started the mornings with low resting blood sugar (103-105) only to have it spike to 180-190 after eating an egg white omelette that only had peppers and onions. Seems to predictably spike like this in the morning rater than in the afternoons and evenings despite me tightly controlling the kinds of carbs (all low GI) I put into my body.

I'm new to this but does all food raise your blood sugar after consumption?
