My confusion is rising faster than my blood sugar, so any advice would be greatly appreciated. I know this is long, but I'm a first time poster to this forum so I want to put out all the info I can, please let me know if it's too much.
I am about 4 years out from diagnosis, and being completely honest I didn't necessarily take this disease as seriously as I should have in the early going. About a year ago I landed in the ER with DKA and a 12+ A1C, which is right about when I decided to tackle this with full dedication; four months later I was 6.1 and all of my markers were in the green zone. I'm not psyched about being insulin dependent (10u NPH, ~4-6u R, and 1000mg metformin, each 2x/day), and so I'm making a strong effort to undertake anything and everything I can to try to beat that back (if possible). In that vein, I've started tracking/logging every single thing I eat, drink, or exercise I do; I test between 3-6 times per day, depending on where I land in the morning and after breakfast, and I've set a new goal of losing 50 pounds (23kg) by the second anniversary of my hospital admission.
Those goals being said, quarantine hasn't been great on my mental health or my tenacity, and I went off the leash a little bit....or a lot... After hitting some highs I wasn't happy about, I rededicated myself and restarted tracking every single number in my life as a diabetic, which is where things are getting weird for me, and where I'd like some advice.
Yesterday I woke up to a BG of 176, I did a little bit of work before it was time to take my insulin, but when I went to check before injecting it was up to 210 despite my having eating NOTHING in that span. Admittedly, it's not like I ran a 5K either, but that was highly confusing.
So for breakfast I ate 141g of arugula, 85g of baby spinach, 8oz of roasted chicken breast, and 3tbsp of Newman's Own Oil & Vinegar. 562 cal 14g carbs, 30g fat, 69g protein. Then I had to drive to pick something up, so I wasn't able to check before my snack time 2.5 hours later when I ate two Atkins Peanut Butter Cups (my weakness) 160 cal 3c/13f/2p, nor my Quest Chocolate Mixed Nuts Snack Bar lunch with 210 cal 11c/15f/10p.
When I tested before dinner, I was down to 114, which seemed reasonable, but to be safe I decided to eat a dinner of roasted chicken and vegetables. I'm working on gaining muscle, so I eat a lot of protein. 967 calories 112g of chicken breast, 119g of roasted sweet potatoes, 226g of Brussel sprouts, 1tbsp of olive oil plus spices. As a 6' 6" man, my BMR is ~1900 calories per day, TDEE varies between 2200 and 2800, but I'm eating ~1700 to lose fat gradually as I slowly gain muscle at the same time.
But I check my BG this morning and it's 287! Off nothing but veggies and protein.
Any thoughts on what the heck could be going on?
