Why does the American Diabetes Association recommend so many high carb recipes?

Hi folks. I am fairly new to this all, so I've been doing a lot of googling to find appealing low carb recipes to try. I don't want to just eat a chicken breast and veggies for the rest of my life! Anyway, my type 1 aunt suggested I check out the American Diabetes Association because they publish recipes on their site, and I am having a hard time making heads or tails of it all. I thought I should be limiting carbs but some of these recipes are pushing what I might want to eat in a day. They have a recipe for scalloped potatoes, which, no. Potato = death. This one has 52 carbs, albeit for an entire meal. I could get a small fry and a McDouble at McDonalds for 60 carbs.
