Calorically dense diet, but at risk of pre diabetes?

Doctor told me I need to lower my carbs quite a bit, but I'm also trying to gain weight (6'3, 183 lbs 18 yo, started at 143lbs November 2015). Usually a good 800cals of my 3600 cal a day diet was from pasta. That's a no go now. Is it fine to have a diet that consists of a lot of milk, peanut butter, nuts, chicken, quest protein bars, whey protein, steel cut oats? Veggies as well but they don't contribute to the calories much so I don't feel the need to talk about them. What other foods can I add that won't affect my blood sugar or whatever? (I don't know a whole lot about diabetes)
