I have type 2 diabetes.My wife struggles with excess weight.I tried the low fat path to control my imbalance.Two years---poor results. I've discovered the low carb alternative and my wife and I began our journey yesterday.(this is our new lifestyle).I will chronicle my journey with occasional posts here. My wife and I in addition decided to incorporate fasting into our daily life.(we now eat two meals per day.Brunch and dinner).(the fasting lowers insulin levels which eating stimulates,and helps reduce insulin resistance which I believe to be the key source of my type 2 diabetes) Yesterday we had scrambled eggs and sausage for breakfast and broccoli souffle(broccoli,cottage cheese,cheddar cheese,butter, milk,eggs) and a hamburger w/melted cheddar cheese for dinner.
We are not hungry,weak,no headaches,no craving. Two meals(low carb) per day is now how we eat and don't eat. Unfortunately I have an ignorant doctor who parrots the low fat, low calorie mantra. I'm watching my glucose levels closely ( have glucose measurement diary).
Today we are eating (same breakfast).Dinner-chicken breast cut into chunks,fried, sprinkled with Zatarains blackened seasoning,served over the top of a large pile of fried Zucchini.
