Most Jewish holidays consist of eating traditional foods. Hanukkah is when we eat latkes(potato pancakes) smothered with apple sauce or sour cream. There's also the jelly donuts called sufganiyot.
Last year, I was still recovering and really did nothing more than light my chanukiah.
This year, I used mashed cauliflower for the latkes. I used the frozen Green Giant brand and just added 2 tablespoons of matzo meal to ind it together and fried them in vegetable oil.
They turned out great!!!
Now, if I could just find a way to make sufganiyot low carb!!!
