Newly diagnosed T1. Struggling to gain control.

I'm 24 years old and last week I was diagnosed with type 1 diabetes when I was admitted to the ICU in DKA. I was in ICU for 3 days and sent home with pretty minimal guidance. Apparently the insulin educator had retired the week prior and the earliest they could get me in to see the endo is mid August...

I was prescribed 5 units Humalog before each meal and 20 units Lantus before bed.

I can't seem to get anything under control. I've been eating low carb (around 60-80 carbs/day), walking and biking(exercise can make me high or hypo), and learning how to calculate everything so that I am taking the right dosages based on carbs/corrections. But my numbers jump around all day between 120-275.

Does anyone have any tips on starting out? It's all so new to me. I've never known anyone with type 1. My family has been really nice and supportive, but they live across the country, so I am really just taking this all in on my own.
