Sugar-Free Pastry Ideas

Hi all! I'm not diabetic myself. I'm a pastry chef looking to add some sugar-free products to my repertoire. I have the Splenda baking mix to work with. Any tips? Are some recipes easier to adapt than others? Ingredients I should stay away from? I'd like to start with something like a chocolate muffin or cookie but not sure if the dark chocolate would itself be too sweet for some people. And what about fruit, or other carbs like flour? Sorry for asking a million questions, but I know very little about this topic so any advice will be greatly appreciated!
